Caption : Potato harvest in progress in Tamilnadu's Udagamandalam. Potato is a highly capital intensive crop and the current market requirement revolve around availability of quality potatoes for export purpose, those having culinary properties suited to domestic consumers and quality raw materials for processing. Potato processing is expected to increase upto 345,000 tonnes by 2006 and likely to go up by 1740,000 tonne by 2010. If so, India shall be processing nearly 6 per cent of projected global potato production in 2010 against nearly one per cent of current production.
