Cumin, much renowned for its aromatic flavour and medicinal properties, is a major ingredient in Curry powders and several ayurvedic medicines. Owing to its diverse use, about 90 per cent of cumin produced in the country is absorbed by the domestic market, making India the biggest consumer of cumin seeds in the world. Mostly grown in Rajasthan and Gujarat, it is harvested at the beginning of the year.
